Coconut Pecan Frosting
Coconut Pecan Frosting is a cooked, rich topping made by combining egg yolks, evaporated milk, sugar, and butter cooked to a golden, thickened consistency, then stirred with sweetened coconut flakes and chopped pecans. This frosting offers a creamy, nutty texture with sweet coconut flavor, perfect for spreading on cakes or cupcakes.
Ingredients
- 4 egg large yolks
- 1 oz evaporated milk can
- 1 1/2 tsp. vanilla extract pure
- 1 1/2 cups granulated sugar
- 3/4 cup butter
- 2 cups sweetened coconut flakes
- 1 1/2 cups pecans chopped
Instructions
- Beat egg yolks, milk and vanilla in large saucepan with whisk until well blended. Add sugar and butter; cook on medium heat 12 min. or until thickened and golden brown, stirring constantly. Remove from heat.
- Add coconut and nuts; mix well.
- Cool to desired consistency prior to frosting.
