Coconut Pecan Frosting
Description
This frosting preparation begins by whisking egg yolks with evaporated milk and vanilla, which are then combined with sugar and butter and cooked on medium heat while stirring constantly until thickened and golden brown. The slow cooking coagulates the eggs and melts the sugar, producing a smooth, custard-like base.
Once off the heat, sweetened coconut flakes and chopped pecans are mixed in to add texture and a blend of sweet and nutty flavors. The final frosting cools to a spreadable consistency and can be used to frost cakes or other baked goods for added moisture and richness.
Ingredients
- 4 egg large yolks
- 1 oz evaporated milk can
- 1 1/2 tsp. vanilla extract pure
- 1 1/2 cups granulated sugar
- 3/4 cup butter
- 2 cups sweetened coconut flakes
- 1 1/2 cups pecans chopped
Instructions
- Beat egg yolks, milk and vanilla in large saucepan with whisk until well blended. Add sugar and butter; cook on medium heat 12 min. or until thickened and golden brown, stirring constantly. Remove from heat.
- Add coconut and nuts; mix well.
- Cool to desired consistency prior to frosting.
