Coconut Protein Balls

Coconut Protein Balls blend vanilla vegan protein powder, hemp seeds, coconut butter, and cinnamon into small, hand-rolled bites. Sweetened lightly with maple syrup and moistened with water, these no-bake balls provide a concentrated plant-based protein snack with a hint of spice and tropical richness from coconut butter.

Ingredients

  • ¼ cup vegan protein powder vanilla flavor
  • ¼ cup hemp seed
  • ¼ cup coconut butter
  • 1 Tablespoon maple syrup
  • 1 Tablespoon water
  • 1 teaspoon cinnamon

Instructions

  1. Put all ingredients in a mini chopper/processor and pulse a few times to incorporate.
  2. Give the dough a stir and start to roll the mixture (with your hands) into 1 tbsp sized balls. It should make about 8. If the dough is too crumbly add a few drops of water.
  3. Eat right away or store in an airtight container at room temp for 3-4 days. For longer storage, store in an airtight container in the fridge for 1-2 week or in the freezer for 2-3 months.

Notes

  • Use vegan vanilla protein powder to maintain a plant-based snack.
  • Adjust dough moisture with small amounts of water if it feels too dry or crumbly for rolling.
  • Store protein balls in an airtight container at room temperature for up to 4 days, refrigerate for 1-2 weeks, or freeze for 2-3 months.
