Coconut Protein Balls
Description
The Coconut Protein Balls combine vegan vanilla protein powder and hemp seeds for protein and texture. Coconut butter adds fat and a creamy coconut flavor, while cinnamon brightens the taste with warm spice. Maple syrup sweetens the mixture lightly, and water adjusts the consistency to enable rolling.
After pulsing the ingredients in a food processor, the dough is shaped into bite-sized balls. These can be eaten immediately or stored at room temperature for a few days, refrigerated for up to two weeks, or frozen for several months, offering flexible storage options for on-the-go snacking.
Ingredients
- ¼ cup vegan protein powder vanilla flavor
- ¼ cup hemp seed
- ¼ cup coconut butter
- 1 Tablespoon maple syrup
- 1 Tablespoon water
- 1 teaspoon cinnamon
Instructions
- Put all ingredients in a mini chopper/processor and pulse a few times to incorporate.
- Give the dough a stir and start to roll the mixture (with your hands) into 1 tbsp sized balls. It should make about 8. If the dough is too crumbly add a few drops of water.
- Eat right away or store in an airtight container at room temp for 3-4 days. For longer storage, store in an airtight container in the fridge for 1-2 week or in the freezer for 2-3 months.
Notes
- Use vegan vanilla protein powder to maintain a plant-based snack.
- Adjust dough moisture with small amounts of water if it feels too dry or crumbly for rolling.
- Store protein balls in an airtight container at room temperature for up to 4 days, refrigerate for 1-2 weeks, or freeze for 2-3 months.
