Coconut Rice

Ingredients

  • 1 cup jasmine rice
  • 1½ cups coconut milk light
  • ½ cup water
  • 1 tablespoon granulated sugar
  • ¼ teaspoon salt

Instructions

  1. Transfer the jasmine rice to a mesh strainer. Rinse it under cold water until the water runs clear to remove excess starch.
  2. In a medium saucepan, combine the light coconut milk, water, granulated sugar, and salt, and bring the mixture to a boil over medium-high heat.
  3. Stir in the rinsed rice and reduce heat to low. Cover and simmer for 18-20 minutes, or until the liquid is absorbed and the rice is tender.
  4. Remove the saucepan from heat and let it sit, covered, for 5 minutes to steam the rice. Then, fluff the rice with a fork and serve.
