Ingredients

  • 2-3 teaspoons chopped nuts I used almonds
  • 1/4 cup almond meal or coconut flour for a nut-free version
  • 1/3 cup shredded coconut plus extra, for rolling
  • 1/4 cup vanilla protein powder plus extra, for rolling
  • 1/4 cup raisins
  • 1/2 teaspoon rum extract
  • 1 teaspoon cinnamon
  • 1/3 cup nut butter I used almond butter
  • 1/4 cup raw honey or agave or maple syrup
  • 1/2 teaspoon vanilla extract

Instructions

  1. Place all the ingredients in a large bowl. With clean hands, mix well until fully combined and a dough has formed.
  2. Line a baking tray with parchment paper or aluminum foil. Then, using a heaped tablespoon measure, roll the dough into equal bite-size balls, and place them on the baking tray.
  3. Place the baking tray in the freezer for 10 to 15 minutes to firm up the balls. If you're short on time, you can skip this step.
  4. Combine a dusting of extra protein powder and some shredded coconut on a plate. Roll the balls through this mixture until they're well coated. Place them in the freezer until you're ready to eat.
