Ingredients
- 2-3 teaspoons chopped nuts I used almonds
- 1/4 cup almond meal or coconut flour for a nut-free version
- 1/3 cup shredded coconut plus extra, for rolling
- 1/4 cup vanilla protein powder plus extra, for rolling
- 1/4 cup raisins
- 1/2 teaspoon rum extract
- 1 teaspoon cinnamon
- 1/3 cup nut butter I used almond butter
- 1/4 cup raw honey or agave or maple syrup
- 1/2 teaspoon vanilla extract

Instructions
- Place all the ingredients in a large bowl. With clean hands, mix well until fully combined and a dough has formed.
- Line a baking tray with parchment paper or aluminum foil. Then, using a heaped tablespoon measure, roll the dough into equal bite-size balls, and place them on the baking tray.
- Place the baking tray in the freezer for 10 to 15 minutes to firm up the balls. If you're short on time, you can skip this step.
- Combine a dusting of extra protein powder and some shredded coconut on a plate. Roll the balls through this mixture until they're well coated. Place them in the freezer until you're ready to eat.
