Ingredients

  • 1/2 cup rolled (old-fashioned) oats (gluten-free, if needed)
  • 1/2 cup strong-brewed coffee
  • 1/3 cup non-fat vanilla greek yogurt (plant-based, if desired)
  • 1/2 teaspoon vanilla extract
  • sweetener of choice to taste (I used stevia)

Instructions

  1. Mix all ingredients in a medium bowl, sweetening to taste.
  2. Let the mixture sit in the refrigerator for at least 6 hours or overnight.
  3. Plate and serve the next morning with toppings of choice.
