Cola Pot Roast
Cola Pot Roast slow-cooks a beef chuck roast with vegetables in a sauce made from onion soup mix, mushroom soup, and cola soda. The soda tenderizes the beef while adding subtle sweetness, resulting in a rich, savory roast with tender meat and accompanying vegetables. It’s a practical one-pot meal with balanced flavors and a convenient approach to classic pot roast.
Ingredients
- 3-4 pounds beef chuck roast
- 1 teaspoon kosher salt
- 1/2 teaspoon black pepper coarse ground
- 3 carrot cut into 2" chunks
- 2 talks celery , chopped
- 2 russet potato peeled and cut into 2” chunks
- 1 packet onion soup mix 1 ounce, dry
- 10.75 can condensed cream of mushroom soup (10.75 ounces)
- 12 ounces cola Coca-Cola soda
Instructions
- Preheat your oven to 325 degrees.
- Season the chuck roast with the Kosher salt and pepper.
- Add oil to a large pot on high heat and sear the beef on both sides, about 4-5 minutes on each side.
- Add the carrots, celery and potatoes around the pot roast.
- In a medium bowl whisk together onion soup mix, cream of mushroom soup and soda then pour it over the chuck roast.
- Cover and cook for 3 - 3 1/2 hours until tender.
