Cold Spinach Artichoke Dip for Charcuterie Board

Ingredients

  • 2 tbsp olive oil
  • 1 onion thinly sliced
  • 3 cup baby spinach
  • 1/2 cup marinated artichokes chopped
  • 1 1/2 cup PLAIN yogurt
  • 1/4 tsp salt
  • 1/8 tsp black pepper

Instructions

  1. Heat olive oil in a pan over medium heat.
  2. Cook sliced onion until golden brown and caramelized.
  3. Transfer the onions to a bowl.
  4. Cook the spinach in a same pan until wilted.
  5. Add the artichokes and cook for a minute.
  6. Let the spinach and artichoke cool.
  7. Mix yogurt, caramelized onion, spinach and artichoke in a bowl.
  8. Refrigerate for at least 30 minutes before serving.
