Coleslaw for Fish Tacos

Ingredients

  • 3 cups shredded green cabbage
  • 1 cup shredded red cabbage
  • 1/4 cup finely chopped cilantro
  • 1/4 cup freshly squeezed lime juice
  • 2 tablespoons olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. In a large mixing bowl, combine green cabbage, red cabbage, and cilantro.
  2. Whisk together lime juice, olive oil, salt, and pepper in a small bowl.
  3. Pour the dressing over the cabbage mixture and toss well to coat evenly. Let the slaw sit for about 10 minutes to marinate before serving.
