Coleslaw with Maple Syrup
This coleslaw blends shredded vegetables with a creamy dressing sweetened subtly by maple syrup. The dressing combines mayonnaise, lemon juice, rice vinegar, and seasoning, producing a tangy and lightly sweet coating for the crunchy coleslaw mix. Parsley adds a fresh herbaceous note as an optional garnish.
Ingredients
- 3/4 cup mayonnaise
- 1 tablespoon maple syrup
- 1 tablespoon lemon juice fresh
- 2 tablespoons rice vinegar
- salt to taste, freshly ground
- black pepper to taste, freshly ground
- 1 pound coleslaw mix shredded
- 2 tablespoons parsley optional, flat-leaf, finely chopped
Instructions
- In a serving bowl, whisk together the mayonnaise, maple syrup, lemon juice, vinegar, salt, and pepper to taste until well combined.
- Add the coleslaw mix and toss evenly until everything is coated.
- Cover and refrigerate the coleslaw for at least 1 hour and up to 1 day to let the flavors meld.
- Toss the coleslaw well before before serving. If desired, sprinkle a little extra parsley on top just before serving.
