Cookie Dough Bites

No Bake Cookie Dough Bites are a quick and easy way to enjoy perfectly portioned servings of cookie dough, made without flour or eggs.

Ingredients

  • 5 tbsp unsalted butter softened
  • 1/2 cup granulated sugar
  • 1/4 cup light brown sugar firmly packed
  • 2 tsp pure vanilla extract
  • 1 1/2 cups finely ground almond flour finely ground oat flour can be used instead
  • 1/4 tsp finely ground salt
  • 4-5 tsp heavy cream or milk
  • 1/3 cup mini chocolate chips
  • 2 tbsp Sprinkles optional

Instructions

  1. Line a large baking sheet with parchment paper and set aside.
  2. In a medium mixing bowl, cream together the butter, granulated sugar, and brown sugar with a hand-held or stand mixer fixed with the paddle attachment. Add the vanilla and mix until well-combined. 
  3. Mix in the almond flour and salt until well-combined. At this point the dough will be quite crumbly. Stir in the milk until the dough begins to stick together. 
  4. Gently fold in the chocolate chips and sprinkles if desired.
  5. Use a cookie scoop to scoop the dough into evenly sized balls and place on the baking sheet leaving space between each dough ball. 
  6. Place the cookie dough bites in the freezer for 20 minutes or refrigerate for 1 hour or until set. Enjoy!
