Cool Whip Cookies

The perfect blend of light, fluffy and chewy. These Cool Whip Cookies melt in your mouth.

Ingredients

  • 15.25 ounces box cake mix we used strawberry and lemon
  • 8 ounces lite Cool Whip
  • 1 egg
  • ½ c. powdered sugar

Instructions

  1. In a mixing bowl combine Cool Whip and eggs. Mix well. Add in cake mix and mix until combined.
  2. Refrigerate cookie dough for 1/2 hour.
  3. Preheat oven to 350 degrees.
  4. Remove dough from fridge. Using a cookie scoop make cookies, rolling in powdered sugar and placing on a cookie sheet lined with a Silpat or parchment paper. Bake for 10-12 minutes.
  5. Cool for 5 minutes on pan and then remove to wire rack. Store in refrigerator.

  • Room Temperature: Store the cooled Cool Whip cookies in an airtight container and they will keep well for several days.
  • How to Freeze the Dough: You can freeze the cookie dough to bake later! Scoop the dough and place the dough balls on a sheet pan lined with parchment. Freeze them for an hour and then store them in a freezer container. Thaw them at room temperature before baking them.
  • How to Freeze Cool Whip Cookies: Store the cooled cookies in a freezer bag or container. They will keep in the freezer for up to two months.
  • White chocolate chips: These would work great with lemon, strawberry, and other fruit flavored cake mixes.
