Ingredients
- 15.25 ounces box cake mix we used strawberry and lemon
- 8 ounces lite Cool Whip
- 1 egg
- ½ c. powdered sugar
Instructions
- In a mixing bowl combine Cool Whip and eggs. Mix well. Add in cake mix and mix until combined.
- Refrigerate cookie dough for 1/2 hour.
- Preheat oven to 350 degrees.
- Remove dough from fridge. Using a cookie scoop make cookies, rolling in powdered sugar and placing on a cookie sheet lined with a Silpat or parchment paper. Bake for 10-12 minutes.
- Cool for 5 minutes on pan and then remove to wire rack. Store in refrigerator.

- How to Freeze the Dough: You can freeze the cookie dough to bake later! Scoop the dough and place the dough balls on a sheet pan lined with parchment. Freeze them for an hour and then store them in a freezer container. Thaw them at room temperature before baking them.
