Copycat Chick-fil-A Chicken Salad Sandwich

Ingredients

  • 4 large frozen breaded chicken breast, cooked and cubed (or 6 breaded tenders)
  • 1 ½ stalks celery diced
  • ⅓ cup pickle relish
  • ½ cup mayonnaise
  • 2 hard boiled eggs
  • ½ teaspoon kosher salt
  • ⅛ teaspoon pepper

Instructions

  1. Cook frozen, breaded chicken according to package (or use leftover homemade breaded chicken). Cube and place in a large food processor.
  2. To the food processor, add celery, pickle relish, mayo, hard boiled eggs, salt and pepper.
  3. Process for about 5-10 seconds, keeping it still slightly chunky but well blended.
  4. Serve chicken salad on toasted whole grain bread with leafy romaine lettuce, or a croissant, or with a fork! ENJOY!

Notes

  • Make it a sandwich. Spoon the chicken salad onto toasted bread or a croissant for the best ever chicken salad sandwich!
  • Do not over blend. When using the food processor, use the pulse setting to give you more control over the consistency of the finished salad. You want it a little chunky, not pureed or blended.
  • Use leftover homemade chicken breasts. If you have leftover cooked chicken in the fridge, feel free to use those instead of frozen!
