Copycat Shoney’s Strawberry Pie
Copycat Shoney’s Strawberry Pie combines a baked pie crust filled with fresh strawberries coated in a thick strawberry gelatin glaze. The glaze sets into a shiny topping that holds the fruit in place and is optionally topped with whipped Cool Whip for added creaminess.
Ingredients
- 1 cup water
- 1 cup granulated sugar
- 3 tablespoons cornstarch
- 6 tablespoons strawberry gelatin mix dry
- 1 pound strawberry stems removed, fresh
- 1 inch pie crust baked, deep-dish
- 8 ounces Cool Whip
Instructions
- Combine the water, sugar, and cornstarch in a medium-sized pot over medium heat. Cook, stirring occasionally, until the glaze is thick enough to coat the back of a spoon.
- Add the strawberry Jello mix to the glaze and stir to combine.
- Place the fresh strawberries into the baked pie crust and pour the strawberry glaze over the top. Chill for at least 2 hours.
- Top the pie with Cool Whip if desired.
Notes
- Pile strawberries high in the pie for a tall, attractive presentation similar to the original Shoney's pie.
- A graham cracker crust can be used instead of a traditional baked pie crust for a different texture and flavor.
