Ingredients
Gingerbread Loaf
- 1 1/2 cups all-purpose flour
- 2 teaspoon cinnamon
- 1/2 teaspoon cloves
- 1/2 teaspoon ginger
- 1/2 cup butter *softened
- 1 cup sugar
- 1 teaspoon orange extract *or squeezed orange juice
- 1 teaspoon orange zest
- 1 cup applesauce
- 1 teaspoon baking soda
Cream Cheese Frosting
- 4 oz cream cheese
- 1 teaspoon vanilla extract
- 2 cups powdered sugar
- 1 teaspoon orange zest
Instructions
- Preheat oven to 350 degrees and grease a large loaf pan with cooking spray.
- In a medium mixing bowl, combine the flour, cinnamon, cloves, ginger, and baking soda.
- In a separate bowl, cream together the butter and sugar until fluffy. Add in the orange extract, zest, and applesauce.
- Combine the dry ingredient mixture with the butter mixture and stir until just combined.
- Pour batter into prepared pan and place in preheated oven to bake for about 40-45 minutes, or until toothpick comes out clean when inserted into center of loaf.
- While bread is baking, combine the cream cheese, vanilla extract, powdered sugar, and orange zest in a mixing bowl until smooth.
- Once bread has fully cooled, spread or pipe the frosting on top and slice bread into desired size pieces. Serve and enjoy!
