Gingerbread Loaf

  • 1 1/2 cups all-purpose flour
  • 2 teaspoon cinnamon
  • 1/2 teaspoon cloves
  • 1/2 teaspoon ginger
  • 1/2 cup butter *softened
  • 1 cup sugar
  • 1 teaspoon orange extract *or squeezed orange juice
  • 1 teaspoon orange zest
  • 1 cup applesauce
  • 1 teaspoon baking soda

Cream Cheese Frosting

  • 4 oz cream cheese
  • 1 teaspoon vanilla extract
  • 2 cups powdered sugar
  • 1 teaspoon orange zest

Instructions

  1. Preheat oven to 350 degrees and grease a large loaf pan with cooking spray.
  2. In a medium mixing bowl, combine the flour, cinnamon, cloves, ginger, and baking soda.
  3. In a separate bowl, cream together the butter and sugar until fluffy. Add in the orange extract, zest, and applesauce.
  4. Combine the dry ingredient mixture with the butter mixture and stir until just combined.
  5. Pour batter into prepared pan and place in preheated oven to bake for about 40-45 minutes, or until toothpick comes out clean when inserted into center of loaf.
  6. While bread is baking, combine the cream cheese, vanilla extract, powdered sugar, and orange zest in a mixing bowl until smooth.
  7. Once bread has fully cooled, spread or pipe the frosting on top and slice bread into desired size pieces. Serve and enjoy!
