Ingredients

  • 1 pound ground beef
  • ½ cup onion diced
  • 3 tablespoons taco seasoning divided
  • ½ cup water
  • 8 Flour Tortillas (8-inch)
  • 2 tablespoons vegetable oil
  • 16 ounces refried beans
  • 1 cup enchilada sauce
  • 2 cups cheddar cheese shredded
  • Your favorite toppings: fresh tomatoes, black olives, green onion, sour cream, etc.

Instructions

    Cup of Yum
  1. In a skillet over medium-high heat, add ground beef and cook until it begins to brown.
  2. Add onions to skillet and continue to cook until meat is cooked through.
  3. Drain any excess grease from the meat and return to skillet before adding 2 tablespoons of taco seasoning and ¼ cup of water. Continue to cook, stirring together, until water cooks away. Set taco meat aside.
  4. Preheat oven to 400 degrees F.
  5. In a large skillet over medium-high heat add 1 tablespoon of vegetable oil. Cook each tortilla until it begins to crisp slightly, approximately 1-2 minutes per side. Set the cooked tortillas aside. After the first 4 tortillas add the second tablespoon of vegetable oil and continue cooking.
  6. In a bowl combine refried beans and 1 tablespoon of taco seasoning. Stir until well combined.
  7. Place 4 tortillas on your baking sheet and add one layer of refried beans, and one layer of taco meat to each tortilla. See note below.
  8. Place a tortilla on top of each and spread enchilada sauce over the tops of the tortillas. Sprinkle with shredded cheddar cheese.
  9. Place the baking sheet in the oven and bake for 5-7 minutes, until cheese is melted.
  10. Remove from the oven and top with your favorite fresh ingredients.
  11. Cut each pizza into 4 slices and serve.

Notes

  • Note: Most likely only 2 Mexican Pizzas will fit side-by-side on your baking sheet, so you will have to bake these in batches, two at a time.
