Corky's Coleslaw
Corky's Coleslaw combines shredded green cabbage, grated carrot, diced green bell pepper, and grated onion mixed into a creamy dressing made from mayonnaise, sugar, Dijon mustard, cider vinegar, celery seeds, salt, and white pepper. After tossing the vegetables with the dressing, the coleslaw is chilled for several hours to allow the flavors to meld, resulting in a crisp, tangy, and slightly sweet salad with a fresh crunch.
Ingredients
- 2 pounds green cabbage shredded
- 1 cup carrot grated
- 1 green bell pepper diced
- 2 tablespoons onion grated
- 2 cups mayonnaise
- 3/4 cup sugar
- 1/4 cup Dijon mustard
- 1/4 cup cider vinegar
- 2 tablespoons celery seeds
- 1 teaspoon salt
- 1/8 teaspoon white pepper
Instructions
- Mix vegetables in a bowl. Mix remaining ingredients in another. Mix together and toss well. Cover and refrigerate 3-4 hours.
