Corn Tomato Avocado Salad

Ingredients

  • 2 ears fresh corn
  • 1 lb cherry tomatoes
  • 1 avocado
  • 1/2 red onion
  • 2 garlic cloves
  • 4 tbsp olive oil
  • 2 tbsp lime juice
  • 1 tsp pepper adjust to taste
  • 1/2 tbsp salt adjust to taste

Instructions

  1. Gather all the ingredients.
  2. Over a gas or charcoal grill, grill the corn on all sides until it gets a nice sear. Using a sharp knife, slice the corn kernels off the cob. Slice the tomatoes into halves, and dice the avocado and onion.
  3. In a small bowl, whisk the oil, lime juice, and grated garlic together. Season the dressing to taste with salt and pepper. Place the chopped veggies into a serving bowl and drizzle them with the salad dressing.
  4. Serve the salad immediately and enjoy!
