Corn Tomato Avocado Salad

Ingredients

  • 2 cups grape tomatoes halved
  • 2 fresh corn cobs
  • 1 avocado chopped
  • 2 green onions chopped
  • 1 Jalapeño seeded and finely chopped
  • 1/2 cup cilantro chopped
  • 2 cloves garlic minced
  • 1 tsp salt
  • 1 lime juiced
  • 2 tbsp extra virgin olive oil

Instructions

  1. Grill corn cobs on the grill and set aside to cool. 
  2. Once cooled, cut kernels from the cob. 
  3. Add remaining ingredients to the corn and mix until combined.
