Corned Beef and Cabbage Slow Cooker

Ingredients
- 3 pounds corned beef brisket
- 2 cups water
- 2 cups beef broth I used Better Than Bouillon, Reduced Sodium
- peppercorn and seasoning that comes with the corned beef
- 1 teaspoon thyme
- 1 1/2 pounds potato small, red
- 1 1/2 pounds carrot peeled and cut into 3-inch lengths (cut in half if the carrots are thick
- 1 green cabbage head, cut into wedges
Instructions
- Put corned beef in the slow cooker and cover with broth, water, thyme and peppercorn seasonings.
- Place potatoes on top of brisket and then add the carrots. Cover and cook on high for 6-7 hours.
- The last hour add cabbage wedges.
- To serve slice meat against the grain into 1/4 inch slices. Add additional liquid before service if desired.
