Description
In this recipe, a 3-pound corned beef brisket is placed in a slow cooker covered with beef broth and water, seasoned with thyme and the included peppercorn pack. Potatoes and carrots are added on top and the dish cooks on high for 6 to 7 hours. Cabbage wedges are added to cook during the final hour, softening without overcooking.
The long slow cooking breaks down the brisket, making it tender and flavorful, while the vegetables cook through and take on the salted, spiced broth. The layering allows the vegetables to steam partly in the flavorful liquid coming from the meat and broth.
Serving involves slicing the brisket against the grain into thin slices to maintain tenderness. Additional cooking liquid may be added when serving to moisten the meat slices. Ingredients
- 3 pounds corned beef brisket
- 2 cups water
- 2 cups beef broth I used Better Than Bouillon, Reduced Sodium
- peppercorn and seasoning that comes with the corned beef
- 1 teaspoon thyme
- 1 1/2 pounds potato small, red
- 1 1/2 pounds carrot peeled and cut into 3-inch lengths (cut in half if the carrots are thick
- 1 green cabbage head, cut into wedges
Instructions
- Put corned beef in the slow cooker and cover with broth, water, thyme and peppercorn seasonings.
- Place potatoes on top of brisket and then add the carrots. Cover and cook on high for 6-7 hours.
- The last hour add cabbage wedges.
- To serve slice meat against the grain into 1/4 inch slices. Add additional liquid before service if desired.
