  • 3 pounds corned beef brisket
  • 2 cups water
  • 2 cups beef broth I used Better Than Bouillon, Reduced Sodium
  • peppercorn and seasoning that comes with the corned beef
  • 1 teaspoon thyme
  • 1 1/2 pounds potato small, red
  • 1 1/2 pounds carrot peeled and cut into 3-inch lengths (cut in half if the carrots are thick
  • 1 green cabbage head, cut into wedges

Instructions

  1. Put corned beef in the slow cooker and cover with broth, water, thyme and peppercorn seasonings.
  2. Place potatoes on top of brisket and then add the carrots. Cover and cook on high for 6-7 hours.
  3. The last hour add cabbage wedges.
  4. To serve slice meat against the grain into 1/4 inch slices. Add additional liquid before service if desired.
