Corned Beef Hash
Corned Beef Hash is made with perfectly cooked leftover corned beef, crispy potatoes, onions and seasoned with herbs and spices.
Ingredients
- 3 tablespoons butter unsalted
- 1 sweet onion finely chopped
- 4 cloves garlic minced
- 3 cups corned beef finely chopped, cooked
- 3 cups potatoes I used Yukon gold, cooked, chopped
- 1 tablespoon smoked paprika
- 1 teaspoon italian herb blend dried
- salt to taste
- black pepper to taste
- parsley for serving, chopped, fresh
Instructions
- Heat a large cast-iron skillet over medium-high heat and melt the butter.
- Once the butter is melted, add the onion and cook until soft, 3-4 minutes. Add garlic and stir to combine.
- Add the potatoes and cook for 5 minutes until crispy and add the corned beef. Season with paprika, dried Italian herbs, salt, and pepper. Stir to combine and cook for another 5-6 minutes.
- Serve immediately garnished with parsley.
