Ingredients

  • 2 cans MARY KITCHEN® Corned Beef Hash
  • 1/2 c. minced onion
  • 1/2 c. flour
  • 3 c. milk
  • 2 tsp hot sauce
  • 3 c. Colby jack cheese divided
  • 10 eggs beaten
  • 1 tsp salt
  • 1/2 tsp pepper

Instructions

  1. In a large skillet brown Corned Beef Hash and onion over medium heat, until cooked through.
  2. Add the flour to the mixture and continue cooking for 2 minutes, stirring occasionally. Slowly add milk and bring the mixture to a biol. Reduce heat and let simmer for 1-2 minutes or until thickened.
  3. Remove from heat and add hot sauce and 2 c. of cheese. Stir until melted and set aside to cool for five minutes. Transfer to large bowl and add beaten eggs, salt and pepper. Stir until combined.
  4. Pour mixture into a lightly greased 9x13'' baking dish. Place in fridge overnight.
  5. Preheat oven to 350 degrees. Bake casserole for 1 hour or until the middle is set and edges are golden brown. Top with remaining cheese and bake 5 more minutes or until cheese is melted.
