Cornflake Cookies
Description
This cookie dough blends unsalted butter and sugar until creamy, then incorporates vanilla essence and lightly beaten eggs. Flour and cornstarch provide structure without making the cookies dense, while crushed cornflakes add texture and a mild toasted flavor. After shaping the dough into small balls, rolling them in the cornflakes coating forms a crispy shell. Baking at 350°F (175°C) for 25 minutes achieves a golden color and a crunchy outside with a tender inside. The recipe results in cookies that balance sweetness with the unique crispness from cornflakes, suitable for snacking or alongside tea or coffee.
Ingredients
- 200 g (7 oz) butter unsalted
- 150 g (5 oz) sugar
- 1 teaspoon vanilla essence
- 2 egg lightly beaten
- 300 g (10 oz) all-purpose flour
- 30 g (1 oz) cornstarch
- 60 g (2 oz) cornflakes coarsely crushed
Instructions
- Beat the butter and sugar together until pale and creamy. Add the vanilla essence, then stir in the eggs.
- Fold in the flour and cornstarch until combined. The mixture should not stick to your hands when touched.
- Using an ice cream scoop, scoop out about 1 teaspoon of the cookie dough. Roll each dough ball in the crushed cornflakes until coated.
- Transfer the cookies to a baking sheet lined with parchment paper. Bake for 25 minutes at 350°F (175°C) or until golden brown.
