Ingredients
Dressing
- 1/2 cup vegetable oil
- 1/4 cup fresh lemon juice
- 1 teaspoon kosher salt
- 1/2 teaspoon ground black pepper
- 1/2 teaspoon ground cumin
- 1 tablespoon apple cider vinegar
Salad
- 1/2 cup finely chopped red bell pepper
- 1 cup chopped roma tomatoes
- 1 medium cucumber seeded and chopped
- 1 cup finely chopped kale
- 1/2 cup chopped cilantro
- 2 cups cooked tricolor quinoa
- 1 cup cooked brown rice I love Success Brown Rice Boil in the bag
- 1 cup cooked red lentils
Instructions
- Combine all the dressing ingredients and mix well.
- In a large bowl, combine the red bell pepper, tomatoes, cucumber, kale, and cilantro and toss to combine.
- Pour the dressing over vegetables. Then add the quinoa, brown rice, and red lentils and mix well.
