Cottage Cheese and Brown Sugar Protein Pancakes

These delicious high protein cottage cheese pancakes are fluffy, moist, and sweetened with brown sugar. They are easy to make, only require a few ingredients, and ready to go in no time.

Ingredients

  • 1 cup cottage cheese
  • 2 large eggs
  • ¼ cup milk
  • ¼ cup brown sugar
  • ½ cup flour
  • 1 tsp baking soda
  • 1 tsp vanilla extract
  • oil or butter for greasing the skillet pan
  • optional add-ins such as banana, strawberries, blueberries, and/or chocolate chips

  1. Into a large mixing bowl, whisk together cottage cheese, eggs, milk, brown sugar, and vanilla extract until fully combined.
  2. Slowly add in the flour and baking soda and mix until well combined. Fold-in your add-in if using.
  3. Heat a non-stick skillet over medium heat and lightly coat with olive oil or butter.
  4. Pour 1/4 cup of the batter onto the skillet for each pancake. Cook until bubbles form on the surface of the pancake, then flip and cook for another 1-2 minutes until golden brown. Repeat with the remaining batter.
  5. Serve the pancakes warm with your favorite toppings. Enjoy!
