These delicious high protein cottage cheese pancakes are fluffy, moist, and sweetened with brown sugar. They are easy to make, only require a few ingredients, and ready to go in no time.

Ingredients
- 1 cup cottage cheese
- 2 large eggs
- ¼ cup milk
- ¼ cup brown sugar
- ½ cup flour
- 1 tsp baking soda
- 1 tsp vanilla extract
- oil or butter for greasing the skillet pan
- optional add-ins such as banana, strawberries, blueberries, and/or chocolate chips

Instructions
- Into a large mixing bowl, whisk together cottage cheese, eggs, milk, brown sugar, and vanilla extract until fully combined.
- Slowly add in the flour and baking soda and mix until well combined. Fold-in your add-in if using.
- Heat a non-stick skillet over medium heat and lightly coat with olive oil or butter.
- Pour 1/4 cup of the batter onto the skillet for each pancake. Cook until bubbles form on the surface of the pancake, then flip and cook for another 1-2 minutes until golden brown. Repeat with the remaining batter.
- Serve the pancakes warm with your favorite toppings. Enjoy!
