Cottage Cheese Ice Cream

Cottage Cheese Ice Cream is a cool, creamy treat that's a bit tangy. It's made with cottage cheese, which makes it a bit healthier than regular ice cream. It's smooth, tasty, and perfect for anyone looking for something sweet but not too heavy. It's a fun and different way to enjoy ice cream!

Ingredients

  • 16 ounces cottage cheese
  • ⅓ cup honey or date syrup
  • 1 tsp vanilla extract
  • ½ tsp sea salt
  • 5 pitted dates

Instructions

  1. To begin, add the cottage cheese, honey, vanilla extract, and sea salt to your blender or food processor.
  2. Blend until completely creamy. If necessary, use a spatula to scrape down the sides of your blender.
  3. Next, add in the pitted dates. Blend until the dates reach your desired consistency. The longer you blend, the smaller they become.
  4. Transfer into a bowl or bread pan and drizzle with more honey. For soft serve, freeze for 1 hour. For hard ice cream, freeze for at least 4 hours.
  5. Lastly, take it out of the freezer. If needed, allow it to sit at room temperature for a few minutes before scooping!

Notes

  • Use full fat cottage cheese for extra creamy ice cream.
  • Replace the honey with pure maple syrup or date syrup if desired.
  • The longer you blend the dates, the smaller they will become.  We like the dates a little chunky!
  • The longer you freeze, the harder the ice cream will become.  It is soft serve consistency after about 1 hour.
  • Store leftovers covered in the freezer for up to 2 weeks.
