Satisfy that midday hunger craving with this easy 5-minute cottage cheese snack bowl! It's topped with blueberries and a sweet and savory blend of pecans, maple syrup, chia seeds, and fresh thyme.
Ingredients
- 2 tablespoons pecans chopped
- 2 teaspoons chia seeds
- 2 teaspoons pure maple syrup
- ½ cup cottage cheese
- ½ cup blueberries fresh or frozen, see note
- 1-2 prigs thyme fresh leaves
- Pinch sea salt flakey
Instructions
- In a small bowl, stir together the chopped pecans, chia seeds, and maple syrup.
- Add the cottage cheese to a bowl and top with the pecan mixture. Add berries, fresh thyme, and a pinch of flakey sea salt, then dig in and enjoy!
Notes
- Nuts: walnuts are a great substitute.
- Blueberries: if using frozen, thaw in the microwave for 30-60 seconds. They will produce more juice and have a softer texture than fresh. This recipe also works with cherries.
- Thyme: mint or fresh rosemary are good substitutes.
