Cottage Potatoes is the ultimate side dish. This is one of our favorite comfort foods and it is loaded with flavor. Perfect for a potluck or a holiday dinner.

Ingredients
- 3 large russet potatoes
- 1/4 cup butter
- 1 cup cottage cheese
- 1/2 onion diced
- 1/2 teaspoon salt
- 1 teaspoon pepper
- 1/2 teaspoon paprika

Instructions
- Clean and peel the potatoes. Then quarter them.
- Preheat the oven to 350 degrees Fahrenheit.
- Place the potatoes in a large pot and cover them with water. Bring to a boil and simmer for about 10-15 minutes until the potatoes are fork tender.
- Drain the potatoes and then return them back to the pot.
- Then add in 2 tablespoons of butter, salt and pepper. Use an electric mixer to blend the potatoes until they are light and fluffy or use a hand masher to mash them to the consistency that you prefer.
- Stir in the cottage cheese.
- Place the mashed potato mixture in a 9X9 baking pan. Slice the remaining butter into thin strips and place it evenly on top. Sprinkle the paprika on top.
- Bake (uncovered) for 30 minutes.
- Remove from the oven. Let sit for 10-15 minutes.
- Serve warm and enjoy!
Notes
- Refrigerate the leftovers in an airtight container for 5-7 days.
