Courgette Fritters

Crisp on the outside and fluffy on the inside, these courgette fritters are easy to make and a great way to use courgettes when they are in season.

Ingredients

  • 5 large courgettes (approximately 4 cups), grated
  • ¾ cup flour
  • 1 tsp baking powder
  • 1 tsp salt
  • ½ tsp black pepper
  • ½ cup milk
  • 1 egg
  • 1 tbsp olive oil
  • 1 cup grated cheddar cheese

  1. Grate the courgettes and place in a colander. Season with a teaspoon of salt and massage the salt into the courgette. Allow to sit for 10 minutes then squeeze out as much moisture as you can.
  2. Transfer the courgette to a bowl and add the flour, baking powder, seasonings, milk, egg and oil. Mix until well combined then fold in the cheese.
  3. Heat a splash of oil in a large skillet or frying pan.
  4. Once hot, carefully drop spoonfuls of the batter into the hot oil. Allow to fry for a 1-2 minutes per side until golden brown and cooked through.
  5. Remove with a spatula then repeat with the remaining batter.
  6. Serve with a squeeze of lemon and your sauce of choice.
