Ingredients

  • 1 cup water
  • 1 cup whole wheat couscous
  • ¼ teaspoon salt
  • 2 teaspoons extra-virgin olive oil
  • 1 nectarine chopped
  • ¼ cup slivered almonds toasted
  • 1 green onion thinly sliced
  • Juice of ½ lemon

Instructions

  1. Bring the water to a boil in a small saucepan. Add the couscous and salt, cover and remove from the heat. Let stand for 5 minutes.
  2. Fluff the couscous with a fork and stir in the olive oil.
  3. Stir in the nectarine, green onion and lemon juice. Serve.
