Cowboy Caviar
Cowboy Caviar is a chilled salad featuring diced tomatoes, black-eyed peas, black beans, corn, red onion, bell pepper, and cilantro, all tossed in a tangy dressing of olive oil, white wine vinegar, lime juice, chili powder, cumin, and salt. The mix of fresh vegetables and beans creates a colorful dish with a combination of crisp, creamy, and juicy textures. Chilling the salad allows the flavors to meld, providing a fresh, slightly spicy complement to chips or protein dishes.
Ingredients
- ⅓ cup olive oil
- ⅓ cup white wine vinegar
- 1 teaspoon chili powder
- 1 teaspoon cumin
- lime juice of ½ lime
- 1 teaspoon salt
- 1 pound Roma tomato seeded and diced
- 15 ounces black-eyed peas canned, drained and rinsed
- 15 ounces black beans 15 ounce can, drained and rinsed
- 11 ounces super sweet corn canned, drained
- 1 red onion diced
- 1 cup red bell pepper diced
- 1 cup cilantro chopped, fresh
- 1 tablespoon sugar optional (up to ¼ cup if preferred)
Instructions
- In a large bowl, blend the olive oil, white wine vinegar, chili powder, cumin, lime juice and salt together.
- Add the tomatoes, black-eyed peas, beans, corn, red onion, bell peppers and cilantro.
- Cover and chill for at least 1 hour for flavors to blend.
- Serve with your favorite chips, as a side dish or as a topping for fish or chicken

Notes
- For best flavor, prepare the salad 3-4 hours before serving to allow flavors to meld.
- Fresh or frozen corn can replace canned corn as preferred.
- Green onions can substitute for red onion for a milder onion taste.
- Red wine vinegar or apple cider vinegar may be used instead of white wine vinegar.
- Adjust sweetness by adding up to ¼ cup sugar, tasting as you go.
