Cowboy Caviar
Description
This recipe for Cowboy Caviar combines a variety of beans and fresh vegetables with a spiced vinaigrette. The olive oil and vinegar dressing, seasoned with chili powder, cumin, lime juice, and salt, offers a balanced tangy and mildly smoky flavor. Combined ingredients include Roma tomatoes, black-eyed peas, black beans, sweet corn, red onion, red bell pepper, and fresh cilantro, which together deliver an array of textures from juicy to tender to crisp.
The salad is mixed and then chilled for at least an hour to let the flavors blend thoroughly. Serving suggestions include using it as a dip with chips or as a side accompaniment for grilled fish or chicken. The fresh herbs and vegetables make it a bright addition to meals, especially in warm weather.
Substitutions include fresh or frozen corn for canned, green onions instead of red onion, and different vinegar types such as red wine vinegar or apple cider vinegar. Sugar can be added to adjust sweetness to taste, starting with a tablespoon and increasing as preferred. Preparing the salad several hours ahead intensifies the flavor combination.
