Cowboy Stew
Sometimes we all need a dinner that isn't too much work and can feed a crowd of hungry bellies. I love making this Cowboy Stew for my family because it's loaded with ground beef, smoked sausage, potatoes, beans, and veggies that will keep them full and satisfied.

Ingredients
- 1 lb. ground beef lean
- 1 16 oz. package smoked sausage sliced into bite-size pieces
- 2 garlic cloves, chopped
- 1 small onion chopped
- 1 lb. baby potatoes halved
- 1 15 oz. can pinto beans undrained
- 1 15 oz. can corn
- 1 14.5 oz. can tomatoes with green chiles diced
- 1 10-12 oz. package mixed vegetables frozen
- 4 cups chicken stock
- 2 tsp cumin ground
- 2 tsp chili powder
Instructions
- In a medium skillet cook and brown your ground beef and drain.
- To your slow cooker add the ground beef, smoked sausage, garlic, onion, potatoes, beans, corn, tomatoes, frozen veggies, chicken stock and seasonings.
- Cover and cook on low for 6 hours or high for 4 until potatoes are tender.
- Serve!
