Crab Salad Sweet Potato Chip Bites and a Virtual Baby Shower

Ingredients

  • 1 cup lump crab meat about 4 ounces
  • ⅓ cup celery chopped fine
  • 2 tablespoons shallots minced
  • ½ teaspoon dried thyme
  • 4 tablespoons Creme Fraiche
  • 1 teaspoon fresh lemon juice
  • 1 cup grated Swiss Cheese
  • kosher salt and fresh ground pepper
  • 2 teaspoons chives chopped
  • 2-3 cups sweet potato chips or about 20-24

Instructions

  1. Mix lump crab meat with chopped celery, shallots, crémé fraiche and lemon juice. Add thyme and swiss cheese and season with kosher salt and pepper.
  2. Place about 1 tablespoon of crab mixture on each chip and garnish with chopped chives. Serve immediately.
