Cranberry Baked Brie

Cranberry Baked Brie features a creamy Brie wheel wrapped in puff pastry, topped with tart cranberry sauce and crunchy chopped nuts. The puff pastry encases the Brie and fillings, then bakes to a golden, flaky crust. This warm appetizer combines rich, soft cheese with sweet-tart cranberries and nutty texture, served immediately with fresh fruit, crackers, or sliced baguette.

Ingredients

  • 1 puff pastry sheet
  • 8 ounce Brie cheese wheel
  • ½ cup cranberry sauce homemade or store-bought whole-berry cranberry sauce
  • ¼ cup pecans chopped, or both
  • ¼ cup walnuts chopped, or both
  • 1 egg beaten
  • grapes apple sliced, baguette sliced, to serve

Instructions

  1. Preheat oven to 425°F.
  2. Line a baking sheet with parchment paper.  Roll out puff pastry onto the paper.  Cut off about ⅓ of the puff pastry (reserve).Note: This recipe was written for tested with refrigerated puff pastry. If using frozen puff pastry, thaw before using and roll out to ¼" thickness.
  3. Place the wheel of Brie in the middle of the larger piece of puff. 
  4. Top the Brie with cranberry sauce.
  5. Add nuts.
  6. Fold the puff around the Brie until it is entirely wrapped, smoothing any seams with your finger.  
  7. Brush the puff with the beaten egg.
  8. Optionally, cut use a cookie cutter to cut decorative shapes out of the reserved, unused piece of puff.  Add the shapes to top of the wrapped Brie, and brush with more beaten egg.Tip: If you don't have a cookie cutter, you can use the lid from a spice jar to cut circles.
  9. Bake the Brie for 20-25 minutes or until golden.  Serve immediately along with fresh fruit, crackers, or sliced baguette.

Notes

  • You can prepare the wrapped Brie up to a day in advance and refrigerate it before baking.
  • Apply the egg wash and add decorations just before putting it in the oven to maintain pastry texture and appearance.
  • This recipe yields about 8 generous servings or 16 smaller sized servings.
  • Choose whole-berry cranberry sauce to add pleasant texture alongside the smooth Brie.
