Cranberry Date Squares
Description
The recipe begins with preparing a fruit filling by simmering chopped Medjool dates, dried cranberries, lemon juice, and water until thickened into a jam-like consistency. Meanwhile, a dough is made from rolled oats, all-purpose flour, almond flour, brown sugar, salt, and cold cubed butter mixed to a crumbly texture.
Half the dough is pressed firmly into a parchment-lined baking pan to form the base crust. The cooled fruit filling is spread evenly over this crust, then topped with the remaining crumbly dough pressed gently over the filling. The assembled pan is baked at 350°F until the top turns golden and the crust is cooked through.
Cooled Cranberry Date Squares can be cut into portions for a portable snack or dessert with a balance of sweet fruit filling and crumbly, buttery crust. Their hearty oat and almond flour base complement the natural fruit sweetness and lemon's brightness.
This recipe can be adapted to gluten-free by using gluten-free oats and flour blends and made vegan by substituting butter with vegan butter or coconut oil, providing some flexibility for dietary preferences.
