Cranberry Nut Bread

Packed with nuts, cranberries, and citrus flavors, this quick bread recipe is a great breakfast or dense snack.

Ingredients

  • 2 1/2 cups all-purpose flour
  • 1 cup white sugar
  • ¾ teaspoon salt
  • 3 ½ teaspoons baking powder
  • ½ teaspoon baking soda
  • 1 egg
  • 3 Tablespoons vegetable oil
  • 1 1/2 Tablespoons orange zest
  • ¾ cup orange juice
  • 1 cup cranberries (fresh or frozen chopped)
  • ½ cup chopped walnuts

Instructions

  1. Preheat your oven to 350°. Grease a 9x5 inch loaf pan.
  2. In a medium bowl combine the flour, sugar, salt, baking powder, and baking soda.
  3. Add the cranberries and walnuts, and stir to coat well with flour.
  4. In another medium bowl mix together the egg, oil, orange zest and orange juice.
  5. Slowly pour the egg mixture into the flour mixture, and stir until just blended. Do not over mix.
  6. Spoon the batter into the prepared pan.
  7. Bake for 55-60 minutes in the preheated oven, or until a toothpick inserted near the center comes out clean.
  8. Cool in pan for 10 minutes, then remove to a wire rack, and cool completely.

Notes

  • For a prettier bread, add a few chopped cranberries on top of the batter in the loaf pan before baking it.
