Ingredients
Wet Ingredients
- 1 3/4 cup milk of choice
- 1 egg
- 1/4 cup maple syrup
- 1 teaspoon orange zest
- 1/4 cup orange juice
- 1 teaspoon vanilla extract
- 1 scoop vanilla protein powder, about 1/4 cup (optional)
Dry Ingredients
- 2 1/4 cups old fashioned rolled oats
- 1 teaspoon ground cinnamon
- 1 teaspoon baking powder
- 1/2 teaspoon kosher salt
- 1 cup fresh or frozen cranberries
Orange Glaze
- 1/2 cup powdered sugar
- 1/2 teaspoon orange zest
- 2 tablespoons orange juice
- Pinch of salt
Instructions
- Preheat oven to 350° F. Spray an 8x8 or similar sized baking dish with cooking spray.
- In a mixing bowl, whisk together all of the wet ingredients, including the protein powder if you are using it.
- In a separate mixing bowl, whisk together all of the dry ingredients except the cranberries.
- Pour the wet ingredients in with the dry and stir together until combined. Stir in the cranberries. Pour the mixture into the prepared baking dish. Bake for 40-45 minutes or until the oatmeal is set and the edges are golden brown.
- Let the oatmeal cool for 10 minutes while you make the glaze. Whisk together all of the ingredients for the orange glaze in a small bowl. Drizzle it on top of the baked oatmeal or serve it on the side.

Notes
- If you are using frozen cranberries, don't defrost them. Add them into the oatmeal mixture frozen.
- Nutritional info doesn't include the protein powder.
