Cream Cheese Banana Nut Muffins

Ingredients

  • 1 ½ cups flour
  • ¼ tsp baking powder
  • ¼ tsp baking soda
  • ¼ tsp salt
  • 6 tbsp butter softened, unsalted
  • 4 oz cream cheese softened
  • ½ cup white sugar
  • ½ cup brown sugar
  • 1 egg
  • ½ tsp vanilla
  • ¾ cup banana 2-3, ripe
  • ½ cup pecans chopped, toasted
  • 1-2 tbsp raw sugar sprinkle on tops, (optional, or white sugar

Instructions

  1. Preheat the oven to 350 degrees. Coat a muffin tin with cooking spray or muffin liners.
  2. Combine the flour with the baking powder, baking soda, and salt; mix until very well combined.
  3. Beat the butter and cream cheese together with a hand mixer until creamy and smooth.
  4. Add the sugars and continue to beat with the hand mixer until light and fluffy.
  5. Add the egg and vanilla extract; mix well.
  6. Gradually add the flour mixture to the banana mixture and stir with a rubber spatula, making sure to scrape the sides of the bowl, until just combined.
  7. Stir in the mashed banana and nuts.
  8. Spoon the batter evenly in the muffin tin.
  9. Sprinkle the tops with a bit of raw or white sugar, if desired.
  10. Place into the oven and bake for 23-25 minutes, or until a tester inserted in the center comes out clean.
  11. Cool in the pans for 10 minutes before moving them to a wire rack to continue cooling.
  12. Serve with ice-cold milk and butter, if desired. Enjoy.
