Ingredients

  • 3 cups cooked shredded chicken
  • 3 oz cream cheese softened
  • 1/2 red onion chopped
  • 1 red bell pepper chopped
  • 2 tablespoons green onion chopped
  • 1/2 cup shredded cheese
  • 1 teaspoon lime juice
  • 1/2 teaspoon garlic powder
  • salt and pepper to taste
  • 4 flour tortillas 8-inch size

Instructions

  1. Mix all of the ingredients together except for the cream cheese and the tortillas in a mixing bowl.
  2. Add the cream cheese and mix until combined.
  3. Place the tortillas on a work surface.
  4. Spread a ½ inch layer of the filling on top of the tortilla.
  5. Roll up the tortilla holding it together tightly with your fingers.
  6. Slice the roll into 1-inch pieces with a sharp knife. Serve and enjoy!

Notes

  • Cream cheese roll ups can be made the night before and chilled in the fridge before slicing and serving.
