Creamsicle Cashew Milk Recipe
This Creamsicle Cashew Milk blends soaked cashews with orange juice and vanilla extract to create a smooth, sweet milk with a citrus twist reminiscent of a creamsicle. Dates add natural sweetness, and the process involves blending and straining for a creamy texture that's refreshing and dairy-free.
Ingredients
- 1 cup cashew soaked in water for 2 hours, roasted
- 2 cups water filtered
- 2 cups orange juice 100%
- 1 1/2 teaspoons vanilla extract
- Pinch salt
- 4 dates optional, but recommended, i use deglet noor**
Instructions
- Drain the water from the cashews and place them in a high-powered blender. Add in all of the remaining ingredient and blend on the highest setting until smooth, about 2 minutes.
- Strain the milk through a nut-milk bag and transfer to a container with a lid.
- Pour into a jar (I like big Mason jars), cover and refrigerate for at least 2 hours, or until totally chilled, and SLURP!
Notes
- If your cashews are raw, roast them at 350°F for 10-12 minutes before soaking to enhance flavor.
- Adding 4 dates increases sweetness and intensifies the creamsicle flavor; reduce or omit dates for a less sweet milk.
