Creamsicle Cashew Milk Recipe

This Creamsicle Cashew Milk blends soaked cashews with orange juice and vanilla extract to create a smooth, sweet milk with a citrus twist reminiscent of a creamsicle. Dates add natural sweetness, and the process involves blending and straining for a creamy texture that's refreshing and dairy-free.

Description

The Creamsicle Cashew Milk Recipe starts with cashews soaked for two hours and optionally roasted, which are then blended with filtered water, 100% orange juice, vanilla extract, and a pinch of salt. Dates can be added to increase sweetness and enhance the creamsicle flavor. The mixture is blended on high until smooth and then strained through a nut-milk bag to remove any remaining solids, ensuring a silky consistency.

The finished milk has a bright, citrus scent and natural sweetness balanced by vanilla, creating a drinkable dairy alternative with a unique creamsicle-like taste. Chilling in the refrigerator for a few hours improves the flavor and texture before serving.

The notes mention roasting raw cashews before soaking if not pre-roasted, which can improve flavor. The number of dates can be adjusted or omitted for less sweetness, allowing customization based on preference. This milk can be enjoyed as a beverage or used in smoothies and cereal.

Ingredients

Servings
  • 1 cup cashew soaked in water for 2 hours, roasted
  • 2 cups water filtered
  • 2 cups orange juice 100%
  • 1 1/2 teaspoons vanilla extract
  • Pinch salt
  • 4 dates optional, but recommended, i use deglet noor**

Instructions

  1. Drain the water from the cashews and place them in a high-powered blender. Add in all of the remaining ingredient and blend on the highest setting until smooth, about 2 minutes.
  2. Strain the milk through a nut-milk bag and transfer to a container with a lid.
  3. Pour into a jar (I like big Mason jars), cover and refrigerate for at least 2 hours, or until totally chilled, and SLURP!

Notes

  • If your cashews are raw, roast them at 350°F for 10-12 minutes before soaking to enhance flavor.
  • Adding 4 dates increases sweetness and intensifies the creamsicle flavor; reduce or omit dates for a less sweet milk.
