Creamy avocado salad dressing {with lime and cilantro}

This creamy avocado salad dressing blends ripe avocado, olive oil, lime juice, jalapeno or green bell pepper, cilantro, and salt into a smooth sauce. The lime adds brightness while cilantro and jalapeno contribute fresh herb and mild heat flavors, making it a flavorful complement to salads.

Ingredients

  • ½ avocado cut in half and pitted, large or 1 small avocado
  • 6 tablespoons olive oil
  • lime juice about ¼ cup, juice from 2 limes
  • 1-2 jalapeno pepper seeds and veins removed - replace with green bell pepper for a non-spicy variation, or serrano pepper
  • cilantro add more to taste, handful; leaves
  • salt to taste

  1. Place all the ingredients for the creamy avocado dressing in a small food processor or blender.
  2. Blend until the ingredients are well combined and you have a smooth dressing, taste and adjust the amount of salt/lime based on your preference. Save refrigerated until ready to use.
