Creamy avocado salad dressing {with lime and cilantro}
Description
The dressing combines the natural creaminess of avocado with olive oil in a blender or food processor until smooth. Lime juice provides a tangy acidity that brightens the flavor and helps keep the avocado fresh. Jalapeno peppers add mild spiciness; for a non-spicy version green bell peppers can replace them.
Fresh cilantro gives the dressing a herbaceous note, enhancing the Latin-inspired flavor profile. Salt is added to taste to balance and bring out flavors. The resulting dressing is rich, smooth, and tangy with a subtle kick that works well over leafy greens, grilled vegetables, or as a dip.
This dressing should be refrigerated until use to maintain its fresh flavor and creamy texture. Adjust seasoning with more salt or lime to suit your palate before serving.
Ingredients
- ½ avocado cut in half and pitted, large or 1 small avocado
- 6 tablespoons olive oil
- lime juice about ¼ cup, juice from 2 limes
- 1-2 jalapeno pepper seeds and veins removed - replace with green bell pepper for a non-spicy variation, or serrano pepper
- cilantro add more to taste, handful; leaves
- salt to taste
Instructions
